Ingredients

  • 3 croissants
  • ¼ iceberg lettuce
  • 2 tomatoes
  • sliced cheese in this recipe I used red leisceter
  • oil for frying

Flour Mix

  • 2 chicken breasts cut into strips
  • 2-3 cups plain flour
  • 1½ tsp paprika
  • 1 tsp mustard powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp allspice
  • 1½ tsp parsley
  • 2 tsp sugar
  • salt and pepper to taste

Wet Mix

  • 240 ml buttermilk
  • 1 egg
  • 1½ tsp paprika
  • 1 tsp mustard powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp allspice
  • 1½ tsp parsley
  • 2 tsp sugars
  • salt and pepper to taste

Instructions

  • Prepare flour mix. Combine the flour, baking soda and seasonings in a large bowl then set aside
  • Prepare wet mix. Combine the milk and vinegar. Once the milk has curdled add the egg and the rest of the seasonings. Set aside.
  • Slice the chicken breasts into strips and place into the wet mix. Allow the chicken to marinade while you prepare the toppings.
Prepare the toppings. Thinly slice the lettuce and tomatoes, and use a grater or knife to create thin strips from the cheese. Set the toppings aside.
  • In two or three strips place the chicken from the wet mix into the flour. Using your hands press the flour into the chicken. Set aside the coated chicken.
In a deep pan, heat the oil over medium-high heat. Add in the chicken and cook for approximately 4 to 6 minutes, turning occasionally, until the chicken is golden and cooked.
  • Optional. Slice the croissants across the centre and toast in a pan. Assemble your breakfast croissant and enjoy!
