Did I make Katsu Chicken Curry?

The simple answer is no. Let me explain. If you’re anything like me and often watch TikTok videos, you’ve probably found some amazing recipes right?

I watched a lot of videos of Katsu chicken curry, but I’m sorry to say that I’m not the biggest fan. Therefore, the ingredients in this recipe are almost the same, with the exception of curry powder. Instead of using curry powder in the sauce, I added chilli paste to make the sauce spicy.

Quick Tip: If spicy food isn’t what you like you can adjust the amount to your liking

Ingredients

  • 2 Chicken Breasts
  • 2 Eggs
  • 3 tbsp Cornflour
  • ½ Cup Panko Breadcrumbs
  • 4 tbsp Soy Sauce
  • 2 Onions
  • 1 tsp Sesame Oil
  • 4 Garlic Cloves
  • 1-2 tbsp Chilli Paste
  • 1 Cup Water
  • 2 Spring Onion
  • 1 tsp Tumeric
  • 1 tsp Salt to your liking
  • Pepper to your liking
  • 2 tsp Paprika
  • 2 tsp Thyme
  • 2 tsp Sugar or Honey
  • tsp Ginger Powder
  • 1 tbsp Garlic Powder
  • 1 tsp Chili Flakes
  • 1 Cup Rice

Instructions

  • On a chopping board, slice the chicken diagonally. Cover chicken with cling film and beat/flatten with a mallot or roling pin.
Season the chicken in 1tsp sesame oil, cornflour, 1tsp thyme, 1tsp paprika, salt pepper, 1tsp sugar/honey, 1tsp ginger powder, 1tsp garlic powder and 1tsp chilli flakes. Set aside to marinade.
  • On a clean board, dice the onion, garlic, and spring onion. Set aside.
Prepare the egg wash and pour the breadcrumbs into a large bowl/tray. The bowl /tray should be big enough for the breadcrumbs to coat the chicken.
  • Dip the seasoned chicken breast into the egg wash using one hand then dip the chicken using the other hand into the bread ingredients.
  • In a pan, heat up sunflower oil. Once the oil is hot fry the coated chicken until crispy and golden. Let the chicken rest on a cooling rack.
  • Next, over medium heat add sesame oil to a pot/pan. Add the onions + garlic and let them sweat (cook until soft). Add the chilli paste, soy sauce, water and the rest of the spices. Add a tsp of cornflour to thicken the sauce.
  • Serve with rice and enjoy!

Notes

  • To make more sauce double the sauce recipe
  • If you have a thermometer, you can use it to determine whether the chicken is fully cooked; it should read 75 degrees.
