How do I prevent overcooking the rice?

I’ve recently had a conversation with someone about how to make the best savoury rice so here are some of my secrets to perfecting rice:

  • the ratio of rice to water used. Using too much water than rice will leave you with mushy rice
  • splash a bit of oil or tsp of butter as this increases the fluffiness of the rice
  • boil using low heat. Although it may seem obvious, you might use high heat in the hopes that the rice would cook more quickly (like I did, haha), but in reality, higher heat causes water to evaporate faster, leaving less time for the rice to cook all the way through.

Ingredients Needed

All you need to make this One-Pot Vegetable Rice is 7 affordable and easy-to-find ingredients:

  • 1 cup Jasmine Rice (Basmati works just as well)
  • 2 Small onions or 1 Medium onion
  • 1 Bell Pepper
  • 1.5 Cups Chicken/Vegetable Stock
  • Seasonings: 1/2tsp turmeric, 1tsp salt, 1tsp pepper, 1tsp sweet paprika, 1tsp mixed herbs, 1.5tsp garlic powder
  • 2-3 Bay leaves
  • 1 cup Frozen peas

I’ve overcooked my rice now what?

Don’t worry you can still salvage mushy rice unless the texture has become like mashed potatoes. Here’s what you’ll need to do:

  • Preheat your oven to 200 degrees.
  • Spread the rice out on a lined baking sheet.
  • Pop the rice into the oven and bake for 10-15 minutes or until dry
  • Once dry let the rice sit for 10 minutes before serving

Ingredients

  • 1 cup Jasmine Rice (£0.50) Basmati works just as well
  • 2 Small onions (£0.42) or 1 Medium onion
  • 1 Bell Pepper (£0.41)
  • 1.5 cups Chicken/Vegetable Stock (£0.06)
  • ½ tsp Turmeric
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Sweet paprika
  • 1 tsp Mixed herbs
  • tsp Garlic powder
  • 2-3 Bay leaves
  • 1 cup Frozen peas (£0.12)

Instructions

  • Fry diced peppers and onion in a pan until brown.
  • Throw in uncooked washed rice into the the pan and toast the rice until the rice turns golden
  • Once the rice is golden throw in the spices and stir. If the rice begins to stick splash some water into the pan. Continue to toast the rice in the spices.
  • Pour in the stock and throw the bay leaves into the pot. Cover the pot with foil and lid. Turn the heat on low and cook the rice until fully cooked. In the last 5 minutes of cooking add in the peas.
  • Once cooked turn off the heat and let the rice rest for 10-15 minutes.Use a fork or spatula to fluff the rice once it's ready.
  • Serve with your desired protein and enjoy : )

Notes

  • I used frozen pepper for this recipe and it came out just as perfectly when using a fresh pepper
