The ingredients in this Easiest Banana Bread recipe is something you’ll love about this recipe. You only need 8 affordable ingredients! Here’s what you’ll need:

  • 3 ripe bananas (mine were frozen ripe bananas)
  • 2 1/2 cups plain flour
  • 1/4 cup brown sugar
  • 125g unsalted butter
  • 1 large egg
  • 1 tsp cinnamon
  • 1tsp baking powder
  • pinch nutmeg (optional)
  • 1tsp vanilla extract (optional)

Can I use frozen bananas?

Absolutely. I freeze my bananas when they become overripe then use them to make banana bread or smoothie bowls.

Quick tip: Bake your frozen bananas in the oven before adding them to the bread mix. Baking the banana brings out the additional sweetness of the bananas.

Can I freeze banana bread?

The simple answer is YES. This banana bread is suitable for freezing. Store in an airtight container then freezes for up to 3-4 months. When ready to use thaw for an hour and then bake for 10-12 minutes at 200 degrees in the oven or until fully defrosted.

I love this method for freezing and thawing banana bread!

Ingredients

  • 3 ripe bananas (£0.14/1)=£0.42
  • 2 ½ cups plain flour (£0.17)
  • ¼ cup brown sugar (£0.27p)
  • 125 g unsalted butter (£0.99)
  • 1 large egg (£0.27)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • pinch nutmeg optional
  • 1 tsp vanilla extract optional

Instructions

  • Pre-heat the oven to 180 °C
  • Bake the ripe bananas for 10-15 minutes or until fully blackened on a prepared tin
  • In a bowl, cream the butter and sugar. Using a spatula fold an egg into the creamed butter and sugar. Next, mix in the vanilla extract. Set bowl aside.
  • At this stage allow the bananas to cool. Once cooled, carefully peel the skin and add the banana into a bowl. Throw in the cinnamon and nutmeg. Use a fork to mash up the bananas.
  • Pour the mashed bananas into the bowl with creamed butter and sugar and use the spatula to fold the ingredients.
  • Add the flour and baking powder and use the spatula to fold the mix into the flour. At this stage feel free to add a bit more cinnamon.
  • Pour the mix into a prepared  8- x 4-inch loaf pan and bake for 40-60 minutes or until golden brown.
  • Remove the bread from the oven and allow to cool. Slice and serve with toppings of your choice. FYI this banana bread tastes delicious with homemade custard.

Notes

  • Store in an airtight container or alternatively wrap in clingfilm. Store in a dry cool place for up to 4 days.
