Ingredients

  • 3 ripe bananas (£0.14/1)=£0.42
  • 2 ½ cups plain flour (£0.17)
  • ¼ cup brown sugar (£0.27p)
  • 125 g unsalted butter (£0.99)
  • 1 large egg (£0.27)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • pinch nutmeg optional
  • 1 tsp vanilla extract optional

Instructions

  • Pre-heat the oven to 180 °C
  • Bake the ripe bananas for 10-15 minutes or until fully blackened on a prepared tin
  • In a bowl, cream the butter and sugar. Using a spatula fold an egg into the creamed butter and sugar. Next, mix in the vanilla extract. Set bowl aside.
  • At this stage allow the bananas to cool. Once cooled, carefully peel the skin and add the banana into a bowl. Throw in the cinnamon and nutmeg. Use a fork to mash up the bananas.
  • Pour the mashed bananas into the bowl with creamed butter and sugar and use the spatula to fold the ingredients.
  • Add the flour and baking powder and use the spatula to fold the mix into the flour. At this stage feel free to add a bit more cinnamon.
  • Pour the mix into a prepared  8- x 4-inch loaf pan and bake for 40-60 minutes or until golden brown.
  • Remove the bread from the oven and allow to cool. Slice and serve with toppings of your choice. FYI this banana bread tastes delicious with homemade custard.

Notes

  • Store in an airtight container or alternatively wrap in clingfilm. Store in a dry cool place for up to 4 days.
