Pre-heat the oven to 180 °C
Bake the ripe bananas for 10-15 minutes or until fully blackened on a prepared tin
In a bowl, cream the butter and sugar. Using a spatula fold an egg into the creamed butter and sugar. Next, mix in the vanilla extract. Set bowl aside.
At this stage allow the bananas to cool. Once cooled, carefully peel the skin and add the banana into a bowl. Throw in the cinnamon and nutmeg. Use a fork to mash up the bananas.
Pour the mashed bananas into the bowl with creamed butter and sugar and use the spatula to fold the ingredients.
Add the flour and baking powder and use the spatula to fold the mix into the flour. At this stage feel free to add a bit more cinnamon.
Pour the mix into a prepared 8- x 4-inch loaf pan and bake for 40-60 minutes or until golden brown.
Remove the bread from the oven and allow to cool. Slice and serve with toppings of your choice. FYI this banana bread tastes delicious with homemade custard.
