I love when recipes are easy. And with these skewers, you don’t have to worry about bad weather since they grill up just as well as they grill in the oven, which means you can enjoy them outside on the bbq or inside under the grill.

Ingredients Needed:

  • 2 Chicken Breasts (cut into cubes) (£2.55)
  • 2-3 tbsp Chopped Coriander (to garnish)

For the Marinade:

  • 3 tbsp Plain Yoghurt (£0.11)
  • 4 Garlic Cloves Minced (£0.42)
  • 2 tbsp Olive Oil
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 -1 tsp Chilli flakes
  • 1 tsp Tumeric
  • 1 tsp Garlic powder (optional)
  • 1/2 Of A Lemons Juice

Naan Bread: Nothing beats soft and warm pieces of fresh naan bread, especially with the juiciness of these chicken skewers

Methods of cooking

For this recipe, I’ve tried both grilling in the oven and barbecuing these Chicken Skewers. I’ll have to admit both methods of cooking taste just as great. But I prefer grilling in the oven as it saves so much more time.

In the oven: Pre-heat the oven to 230C and grill chicken for 15-20 minutes or until cooked in the centre

On the barbecue: Cook the skewers for 4-5 minutes on each side or until cooked in the centre

For the Marinade

Instructions

  • Dice the chicken breast into even cubes. Leave in the fridge whilst you make the marinade
  • In a large bowl, add the yoghurt, oil, spices and lemon juice. Mix the chicken into the marinate.
    Cover the bowl and leave in the fridge for at least hour or overnight.
  • Pre-heat the oven to 240℃
  • Skewer the chicken pieces onto the wooden skewers. Continue to skewer the rest of the chicken pieces on the skewers.
  • Grease the rack lightly with oil to avoid the skewers from sticking. Then place the skewers onto the rack and roast for 15-20 minutes or until fully cooked.
  • Garnish with fresh cilantro and mint and enjoy!
