These are the BEST Vegan Chocolate Chip Cookies you’ll ever eat. These cookies are soft, gooey and chocolaty and require simple ingredients. No need for egg substitutes or apple sauce just simple everyday ingredients. These cookies only cost around £0.20 per cookie!

I like to call these Vegan Chocolate Chip Cookies no-nonsense cookies because they don’t require any extra ingredients or substitutes.

Ingredients Needed

One thing you’ll love about this recipe is it’s easy to make and because it only requires simple ingredients. Here’s what you’ll need:

Dry Ingredients:

  • 1.5 Plain white flour (£0.10)
  • 1 cup of Brown sugar (£0.38)
  • A tsp of Bicarbonate powder
  • Pinch of Sea salt
  • 1 cup Dark Chocolate Chips (I used a 150g slab of dark chocolate) (£1.00)

Wet Ingredients:

  • 1/2 cup Softened Vegan Butter (£0.41)
  • 2-3 tbsp Coconut Oil (£0.55)
  • A tsp of Vanilla extract

Total Cost: £2.44/£0.20 per cookie!

Baking cookies are one of my favourite but most affordable and comforting recipes to bake. I love how there are so many different textural elements to cookies: Crispy on the outside, soft and gooey in the middle. It’s just awesome. Plus baking cookies are the EASIEST things to bake so if you hate the idea of particular measurements etc etc I encourage you to try this recipe out because it’s so simple but so delicious.

Equipment

  • 1 Hand mixer or whisk

Ingredients

For the Dry ingredients

  • 1.5 cup Plain white flour
  • 1 cup Brown sugar
  • 1 tsp Bicarbonate powder
  • Pinch Sea salt
  • 1 cup Dark Chocolate Chips I used a 150g slab of dark chocolate

For the Wet ingredients

  • ½ cup Softened Vegan Butter
  • 2-3 tbsp Coconut Oil
  • 1 tsp Vanilla extract

Instructions

  • In a large bowl cream the butter, sugar, and vanilla extract until smooth and fluffy using either a whisk or a hand mixer.
    Next throw in ½ of the flour and use a spatual or spoon to combine together
  • Pour in the coconut oil and continue to combine using the spatula
    At this stage throw in the rest of the flour along with the bicarbonate powder. Combine the ingredients in well.
  • The cookie dough should not feel wet and oily. If so add a few tablespoons until less wet and oily.
  • Mix in the dark chocolate chips. Divide the dough into 12 even balls and place on a prepared baking tray.
    Chill in the fridge for at least an hour or even better in the freezer overnight.
  • When your're ready to bake the cookies preheat your oven to 180ºC Fan, or 200ºC if youre using a regualr oven.
    Bake for 8-12 minutes. Once baked leave to cool on a baking rack for 30-40 minutes before serving! Sprinkle over sea salt whislt cooling
  • Enjoy!
