These are the BEST Vegan Chocolate Chip Cookies you'll ever eat. These cookies are soft, gooey and chocolaty and require simple ingredients. No need for egg substitutes or apple sauce just simple everyday ingredients.
1cupDark Chocolate Chips I used a 150g slab of dark chocolate
For the Wet ingredients
½cupSoftened Vegan Butter
2-3tbspCoconut Oil
1tspVanilla extract
Instructions
In a large bowl cream the butter, sugar, and vanilla extract until smooth and fluffy using either a whisk or a hand mixer. Next throw in ½ of the flour and use a spatual or spoon to combine together
Pour in the coconut oil and continue to combine using the spatula At this stage throw in the rest of the flour along with the bicarbonate powder. Combine the ingredients in well.
The cookie dough should not feel wet and oily. If so add a few tablespoons until less wet and oily.
Mix in the dark chocolate chips. Divide the dough into 12 even balls and place on a prepared baking tray. Chill in the fridge for at least an hour or even better in the freezer overnight.
When your're ready to bake the cookies preheat your oven to 180ºC Fan, or 200ºC if youre using a regualr oven. Bake for 8-12 minutes. Once baked leave to cool on a baking rack for 30-40 minutes before serving! Sprinkle over sea salt whislt cooling
