Ingredients Needed for Vegan Chocolate Mousse

  • 75g/Half a Slab of Dairy-free Milk/Dark Chocolate (£0.75)
  • Water/Aquafaba from a can of Chickpeas (£0.59)
  • 1 tsp White Sugar or 1 tsp Maple Syrup (£0.01)
  • Coconut Oil/ Neutral Oil to melt chocolate (optional)

What Exactly is aquafaba?

Aquafaba is the liquid found in canned legumes, particularly chickpeas. Its thick viscosity makes it an excellent vegan egg substitution. It can be used as an egg binder in recipes like vegan mayonnaise, macrons, meringues or whipped into semi-soft peaks.

Aquafaba in a vegan mousse creates the creaminess and fluffiness.

Can I use normal chocolate?

Yes! Feel free to use whatever chocolate you have on hand!

How to Make Vegan Chocolate Mousse with Aquafaba

  1. Blend the aquafaba and sugar in a food processor until soft peaks form
  2. Melt the chocolate and oil in the microwave or over hot water. Allow the melted chocolate to cool for 5-10 minutes
  3. Combine the aquafaba and melted chocolate and pour into small pots or into a serving dish
  4. Set in the fridge for 2 hours or overnight
  5. Enjoy!

Ingredients

  • 75 g Dairy-free Milk/Dark Chocolate (£0.75) Half a Slab of 150g bar
  • Water/Aquafaba from a can of Chickpeas (£0.59
  • 1 tsp White Sugar or Maple Syrup (£0.01)
  • Coconut Oil/ Neutral Oil optional

Instructions

  • Separate the chickpeas from the water (aquafaba) and save the chickpeas for a curry or as a snack.
    In a food processor, blend the aquafaba into stiff peaks (white and foamy), add in the sugar and blend for a few seconds
  • Melt the chocolate and coconut oil in either the microwave or by boiling over pot of water
  • Let the chocolate cool for 5-10 minutes before combining the aquafaba and melted chocolate. Once combined pour into a bowl or into 120ml pots.
  • Set in the fridge for 2 hours or overnight!
  • Enjoy!
