First of all, what I want to do is to confess how much I love fried chicken (especially takeout fried chicken) okay, now I know that there are a lot of people who swear by this. But like many others, I have come to experience that it can be pretty expensive and over time I discovered it’s not worth spending loads of money on takeout. Being on a budget doesn’t always mean compromising on quality and flavour. These Crispy Buttermilk Chicken Tenders are arguably the best “fakeaway” to make.

What Kind Of Chicken To Use

Chicken Tenders are typically made with chicken breasts but the type of chicken you use depends on the size you want. Do you want small and thin chicken tenders or do you want thick and chunky chicken tenders? For this recipe, I wanted thick and chunky chicken tenders so I used skinless chicken breast.

But this recipe goes perfectly well with skinless chicken thighs especially if you’re looking to make small and thin chicken tenders

What To Serve With These Chicken Tenders

I absolutely LOVE these Crispy Buttermilk Chicken Tenders with tangy mayonnaise or sweet chilli sauce because they taste just as great on their own but if you’re looking for a meal here are a few meal suggestions:

  • Crispy Buttermilk Chicken Wrap| Throw these tenders on a soft tortilla wrap and load it with veggies and sauce

Ingredients

  • 650 g chicken mini fillets £5.50 alternatively use chicken breasts
  • 300 g self-raising flour £0.16

Seasoning for chicken

  • 1.5 tsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp adobo
  • 1/2 tsp black pepper
  • pinch chili flakes

For the wet ingredients

  • 2 medium Eggs (£0.20×2) =£0.40
  • 1/4 cup whole milk £0.05
  • splash of white vinegar to make the buttermilk

Seasoning for flour

  • 1 tsp paprika
  • 1 tsp turmeric optional
  • 1 tbsp adobo
  • pinch black pepper

Instructions

  • The chicken fillets must be cleaned and patted dry with paper towels. To soften the chicken, use a fork to remove the tendons.
In a bowl, season the chicken with the seasonings. Leave to marinate for a few hours.
  • While the chicken marinates, pour the self-rasing flour into a bowl along with the seasonings. Set to the side.
Once the chicken is done marinating add the wet ingredients into the bowl with chicken. Let it sit for 10-20 mintues before coating the chicken into the seasoned flour.
  • Once your chicken is coated in flour it's time to fry!
Heat the oil in a pan. Once the oil is hot, carefully place the tenders into the pan and fry for 2-5 minutes until deeply golden brown.
Place the fried chicken on paper towls to drain the excess oil.
  • Serve with a large bowl of sweet chili sauce or mayonaise !
