Ingredients Needed

  • pack of 6-8 stale small croissants

For the Syrup:

  • 40ml water
  • 40g granulated sugar

For the Pistachio Filling:

  • 1cup (120g) pistachios, shelled and unsalted
  • 1/2 cup (100g) sugar
  • 2 tablespoon (16g) all-purpose flour
  • 1/2 teaspoon (2g) salt
  • 2 tablespoon (28g) unsalted butter, melted
  • 1 egg
  • splash of vanilla

Ingredients

  • pack of 6-8 stale small croissants
  • 40 ml water
  • 40 g granulated sugar
  • 1 cup 120g pistachios, shelled and unsalted
  • 1/2 cup 100g sugar
  • 2 tablespoon 16g all-purpose flour
  • 1/2 teaspoon 2g salt
  • 2 tablespoon 28g unsalted butter, melted
  • 1 egg
  • splash of vanilla

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare Pistachios: Finely grind the pistachios in a food processor.
  • Mix Filling: In a bowl, combine the ground pistachios, sugar, flour, and salt. Add the melted butter and egg white, mixing until a smooth paste forms.
  • Make Syrup: Mix the water and sugar together.
  • Brush Syrup: Brush the croissants with the sugar syrup
  • Add Filling: Place a small amount of pistachio filling in each croissant and spread evenly.
  • Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and flaky.
  • Cool: Allow the croissants to cool on a wire rack before serving.
