Ingredients
pack of 6-8 stale small croissants
40mlwater
40ggranulated sugar
1cup120g pistachios, shelled and unsalted
1/2cup100g sugar
2tablespoon16g all-purpose flour
1/2teaspoon2g salt
2tablespoon28g unsalted butter, melted
1egg
splash of vanilla
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare Pistachios: Finely grind the pistachios in a food processor.
Mix Filling: In a bowl, combine the ground pistachios, sugar, flour, and salt. Add the melted butter and egg white, mixing until a smooth paste forms.
Make Syrup: Mix the water and sugar together.
Brush Syrup: Brush the croissants with the sugar syrup
Add Filling: Place a small amount of pistachio filling in each croissant and spread evenly.
Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and flaky.
Cool: Allow the croissants to cool on a wire rack before serving.
