Tender Beef and Vegetable Stew £1.26p per serving

This Tender Beef and Vegetable Stew is the ultimate comfort meal during a cold wintery day. Packed with healthy and nutritious vegetables this stew can be eaten solo or on a bed of rice. One of the best parts of this recipe is that it costs under £10.00p to make.

The stew is made with simple ingredients that every household has and is the perfect meal for those who are seeking a succulent meaty stew that doesn’t compromise on flavour.

Ingredients You’ll Need

For the base of this recipe you’ll need:

  • Beef Stewing Steak (you can use beef chunks)
  • Seasoning (jump to the recipe to view what I used)
  • Onion
  • Potatoes
  • Carrots
  • Bell pepper
  • Browning gravy (optional): This isn’t necessary but it does give a nice colour to the stew.

Reasons you’ll fall in love with this Beef Stew

  • Packed with sweet and peppery flavours
  • Inexpensive as it costs under £10.00p
  • High in fibre
  • Flexible. You can use any vegetables you prefer in this recipe. Sweet potatoes make a great healthier alternative to white potatoes.

Another reason this recipe is amazing is that it is tastyinexpensivesimple to make, and adaptable. I double the ingredients to make a larger batch of this for my family and it gets us through the week.

If you’re new to cooking, I highly recommend giving this recipe a try because it’s beginner friendly too, so you won’t be concerned about whether you’re capable of making it. Depending on the season it is you could use a variety of vegetables in this stew. Vegetables that aren’t in season tend to cost more but also don’t taste as good so keep an eye out for veggies that are in season.

Ingredients

  • 400g Stewing Steak Beef Chunks work well too
  • 1 tbs Olive Oil
  • 1 Diced Onion
  • 5 Potatoes
  • 1 Bell Pepper
  • 1 Pack of Baby Corn
  • 3 Sliced Carrots
  • Celery Stalks
  • 1 tbsp Ketchup
  • 3 Bay Leaves
  • 2 tbsp Ground Black Pepper
  • 1 tsp Brown Sugar
  • 1 tsp Ginger Powder
  • 2 tbsp Garlic Powder
  • 1.5 tsp Mixed Herbs

Instructions

  • To start off chop up your vegetables and set aside.
  • In a bowl add the beef and season with 1tsp pepper, 1tsp sugar and 1tsp garlic powder. Set aside.
  • Heat up your pot on a medium heat and add the oil. When the oil is heated (the oil will move smoothly around the pot) add in beef. Braise the meat until its brown on the outside. Take the meat out and set aside
  • In the same pot add the vegetables and cook until the onions are translucent. Add in the rest of the spices and cook for another two minutes. Throw in the braised meat and stir everything in.
  • Add in the stock and ketchup and cover the pot with the lid. Turn the heat on low and let the stew cook for 45 minutes.
(Add more or less seasoning according to your preference)
  • Serve with rice or soft bread and enjoy!

Notes

  • If the stew is slightly watery take 4tbs of the stew sauce and add into a bowl. In the same bowl add 2tbs of cornflour. Mix untill there are no clumps. Next, add the cornflour mix into the pot and stir in. Leave the stew to cook for longer until the stew is thicker. If needed add more cornflour.
