Chicken and Potato Tray Bake

If you're looking for a fuss free, comforting and affordable meal then you need to try my easy chicken and potato tray bake. This chicken and potato tray bake is one of my favourite comfort meals and is enjoyed best with family and friends.

Ingredients

  • 4-5 pieces of chicken (£4) I got a mix of chicken breast and legs
  • 3-4 large potatoes cubed (£0.53)
  • 2 onions sliced (£0.42)
  • 2 garlic cloves (£0.03)
  • 2-3 carrots cubed (£0.17)
  • 1 bell pepper diced (£0.59)

seasoning for chicken

  • 1 tbsp parsley
  • 1 tbsp paprika
  • 1 tsp garlic granules
  • 1 tsp black pepper
  • 1 tsp sea salt
  • 1 tsp cajun
  • 1/2 lemon juice (£0.15)
  • 1 tsp lemon zest take the zest from the lemon used for the juice
  • olive oil

seasoning for potatoes

  • drizzle of olive oil
  • 1 tsp parsley
  • 1 tsp cajun
  • 1 tsp paprika
  • 1 tsp garlic granules
  • salt and pepper to taste

Instructions

  • Preheat the oven 200℃
  • Season the chicken with a drizzle of olive oil, parsley, paprika, garlic granules, black pepper, sea salt, cajun, lemon zest, and lemon juice. Massage well and set aside for 10-15 minutes.
  • In a large lined baking tray, combine the cubed potatoes, sliced onions, diced bell peppers, garlic cloves and cubed carrots. Drizzle olive oil and season with parsley, cajun, paprika, garlic granules, and salt and pepper to taste.
  • Place the chicken on top of the potatoes and bake in the oven until fully cooked.

Notes

  • half way through baking turn over the chicken to achieve crispy chicken
