Preheat the oven 200℃
Season the chicken with a drizzle of olive oil, parsley, paprika, garlic granules, black pepper, sea salt, cajun, lemon zest, and lemon juice. Massage well and set aside for 10-15 minutes.
In a large lined baking tray, combine the cubed potatoes, sliced onions, diced bell peppers, garlic cloves and cubed carrots. Drizzle olive oil and season with parsley, cajun, paprika, garlic granules, and salt and pepper to taste.
Place the chicken on top of the potatoes and bake in the oven until fully cooked.
