Creamy Vegan Lentil Pasta (£1.16p)

This incredibly Creamy Vegan Lentil Pasta is ready in 30 minutes and it's the perfect pasta recipe that's comforting and absolutely delicious. All you'll need is 10 simple ingredients; Rigatoni (arguably the best pasta), Canned Tomatoes, Tomato Puree, Dry Lentils, Chilli Paste, Onion, Garlic, Vegan Cream and Vegan Mozzarella.

Ingredients

  • Cups Rigatoni (1.50/500g) =(£0.60)
  • 1 Cup Vegan Mozzarella (£2.50/200g)=(£1.25)
  • 250 ml Vegan Cream (£1.65) Double or Single
  • 1 Large Onion (£1.00/2)=(£0.50)
  • 3 Garlic Cloves (£0.89/4)=(£0.22)
  • Handful Spinach
  • 1 tsp Tomato Puree (£0.45/200g)=(£0.02)
  • 1 Canned Plum Tomatoes (£1.15)
  • ½ Cup Dry Lentils (£2.35/1kg)=(£0.35)
  • 2 tsp Chili Paste (£1.45/90g)=(£0.10)
  • 1 tbsp. Olive Oil
  • Salt Optional
  • Pepper Optional
  • Basil Optional

Instructions

  • Dice the onion into cubes and slice the garlic.
  • Fry the onion and garlic in a medium heated pan. Fry until caramelized (golden brown). Add the chili paste and tomato paste and continue to fry the onions and garlic.
  • After frying for an additional 2-3 minutes pour the canned tomatoes along with a cup water. Stir well.
  • At this stage feel free to season with salt, pepper, or basil to your liking.
  • At this stage, add the rigatoni to salted boiling water. Cook according to packet instructions.
  • Next, add the lentils and cover with more water if needed. Cook until lentils are softened.
  • Pour in the cream and stir until the cream is mixed. Next throw in the cheese and continue to stir.
  • Once your rigatoni is cooked, drain the excess water and add into the creamy sauce. Mix the rigatoni into the sauce.
  • Lastly, add the spinach and continue to stir until the spinach breaks down.

Notes

  •  Use canned lentils to make this recipe quicker 
  • Alternatively you can soak the lentils for a couple of hours to reduce cooking time
