Easy Chicken Quesadillas are the best for a budget-friendly and busy lunch or evening meal. These Easy Chicken Quesadillas are packed with juicy chicken, seasoned veggies and lots of melted cheese. All you need is one pan and 30 minutes and delicious Easy Chicken Quesadillas!
This recipe has become a go-to and a favourite recipe within my family because of how delicious and easy it is to make.

Ingredients

  • 3 Chicken Breasts £4.70
  • 5-8 Wraps £1.10
  • 2 Thinly Sliced Bell Peppers £0.90
  • 2 Diced Red Onions £0.24
  • 2-4 Chopped Garlic Cloves £0.42
  • 1 tbsp Olive Oil
  • 1-2 Chillies (optional)
  • 2-3 Limes (optional)
  • 1 Juice of lime (optional)
  • 2-3 cups Cups Mature Cheddar £1.25
  • 30 g Cilantro £0.60

Seasoning

  • 1.5 tbsp Garlic Powder
  • 1 tsp Tumeric
  • 1.5 tsp Chili Powder
  • 1 tsp Ginger Powder
  • 1 tbsp Paprika
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Cajun (optional)
  • Black Pepper to taste
  • Salt to taste

Instructions

  • In a bowl add the cubed chickenhalf of the seasoningsoil, and juice of a lime (optional). Mix in well and allow to marinate for at least an hour.
  • Next, preheat the pan over medium-high heat and add cooking oil. Once the oil is hot, carefully add the chopped vegetablesFry the onions until translucent.
  • Next, add in the other half of the seasonings and fry for 2-3 minutes.At this point pour a splash of water in the pan to make the vegetables saucy.Remove the vegetables and place them in a separate bowl.
  • In the same pan fry the chicken on each side for 3-5 minutes or until thoroughly cooked. Remove the chicken from the pan and shred using 2 forks to pull the chicken. Alternatively, you could cut the chicken into smaller pieces.
  • Next, throw the pulled chicken and the vegetables into the pan and fry together for 2-3 minutes before adding a splash of water to make the chicken and vegetables saucy. Remove the chicken and vegetables and place them together in a bowl.
  • Pour a tablespoon of the sauce from the chicken into the pan and then place a tortilla/wrap into the same pan that was used to cook the chicken and vegetables
  • Cover up half of the tortilla/wrap with cheese, meat and veggie filling, and more cheese. Fold the tortilla over to close. Cook until golden.
