Preheat the oven to 190℃. Chop the onion into quarters and deseed the bell peppers. Remove the garlic skins. Throw the onions, bell peppers, garlic and chillies in a baking tray. Drizzle olive oil over the vegetables and roast in the oven. Wash and remove any excess skin on the chicken. Pat dry the chicken and rub in the seasonings. Set aside to marinade.
When the vegetables are done roasting, mix them with a hand blender or food processor until smooth. Squeeze the lemon juice into the roasted vegetables and continue to blend until smoothPour the sauce over the chicken and set aside for a few hours to marinate. After marinating bake the chicken in the oven for 40 minutes or until cooked.
When cooked, garnish with shredded coriander and serve with crispy fries and rice.
