This Spicy Tomato Pasta is the perfect weeknight dinner. It's incredibly easy and quick to make. You only need 5 ingredients for the cherry tomato sauce which is packed with juicy and sweet flavours
Cook the pasta in salted boiling water until al dente then drain, reserving about 1 cup of the cooking water.
Heat your olive oil in a medium to large pan over medium-high heat. Fry the garlic and onion until translucent.
Add the cherry tomatoes and season with chilli, paprika, salt and pepper. Continue to stir until the tomatoes begin to burst.
Once the onions are brown, pour in 1/4 cup of the cooked pasta water into the tomatoes and stir for 2-3 minutes. At this stage use a wooden spoon or fork and smash the tomatoes to create more sauce. Continue to stir until the sauce becomes a bit thicker.
Add the pasta to the sauce and stir until the pasta is fully coated in the sauce. Add more salt and pepper til desired.
