Pre-heat the oven to 180 °C
In a bowl. combine the sugar and the melted butter until a smooth paste
Next, whisk in the eggs and continue to mix until smooth
Sieve out the cocoa powder and whisk into the wet ingredients. Add the vanilla extract and cotinue to mix. Set aside.
Chop up the chocolate and set aside.
Sieve the flour into the wet ingredients. Using a spatula or spoon fold the flour into the wet ingredients. Add the chocolate chips and continue to fold.
On a tray with baking paper, scoop out 12 balls of the dough and lay it on the tray. The cookies should be set 2 inches apart from the sides of the tray and from the cookies.
Chill the cookies in the fridge for 10-15 minutes. Then bake for 8 minutes.
Once the cookies are done let them cool.
Melt the spare chocolate and drizzle over the cookies.
